Creamy Potatoes with Ham

450 gram (1 pound) potatoes, diced
50 gram (2 ounce) butter
350 gram (12 ounce) leeks, sliced
2 teaspoon Ground Cumin
2 teaspoon Ground Coriander
Salt and Black Peppercorns Mill, , freshly ground
25 gram (1 ounce) plain flour
450 millilitre (3/4 pint) milk
225 gram (8 ounce) smoked ham, cubed
100 gram (4 ounce) Cheddar cheese, grated
½ teaspoon Paprika
COOKING INSTRUCTIONS
- 1 Cook the potatoes in boiling, salted water until tender. Drain.
- 2 Meanwhile, melt the butter in a large saucepan and fry the leeks for 4-5 minutes. Add the Cumin, Coriander, salt and Pepper. Fry for a further 1-2 minutes. Stir in the flour, cook for 1 minute. Blend in the milk. Bring to the boil, stirring until thickened. Stir in the potatoes and ham.
- 3 Transfer to an ovenproof dish. Mix the cheese and Paprika together and sprinkle over the leeks and potatoes. Place under a pre-heated grill until golden.
