  • 450 gram (1 pound) potatoes, diced

  • 50 gram (2 ounce) butter

  • 350 gram (12 ounce) leeks, sliced

  • 2 teaspoon Ground Cumin

  • 2 teaspoon Ground Coriander

  • Salt and Black Peppercorns Mill, , freshly ground

  • 25 gram (1 ounce) plain flour

  • 450 millilitre (3/4 pint) milk

  • 225 gram (8 ounce) smoked ham, cubed

  • 100 gram (4 ounce) Cheddar cheese, grated

  • ½ teaspoon Paprika

Instructions

  • 1 Cook the potatoes in boiling, salted water until tender. Drain.
  • 2 Meanwhile, melt the butter in a large saucepan and fry the leeks for 4-5 minutes. Add the Cumin, Coriander, salt and Pepper. Fry for a further 1-2 minutes. Stir in the flour, cook for 1 minute. Blend in the milk. Bring to the boil, stirring until thickened. Stir in the potatoes and ham.
  • 3 Transfer to an ovenproof dish. Mix the cheese and Paprika together and sprinkle over the leeks and potatoes. Place under a pre-heated grill until golden.
