Vegetable Lasagne

2 tablespoons olive oil

2 onions, cut into chunks

2 red or yellow peppers, diced

1 aubergine, diced

2 courgettes, diced

2 tablespoons Garlic Italian Seasoning

400 gram tin chopped tomatoes

6 lasagne sheets

100 gram (4 ounce) Cheddar cheese, grated

Instructions
- 1 Pre-heat the oven to 190°C, 375°F, Gas Mark 5.
- 2 Heat the oil and fry the onions on a low-heat for 5 minutes, until softened. Turn up the heat, add the vegetables and fry for a further 10-12 minutes. Add the Perfect Shake Garlic Italian Special Blend and tomatoes and bring to the boil.
- 3 Cover and simmer for 5 minutes, until the vegetables are almost tender and the sauce has thickened.
- 4 Place alternate layers of vegetables and lasagne sheets in an ovenproof dish, finishing with a layer of vegetables.
- 5 Top with cheese and bake for 25-30 minutes, until golden brown.
