A great alternative to a classic lasagne, this simple vegetable lasagne recipe combines succulent, fresh vegetables with Garlic, Oregano and Basil for a delicious, quick and easy meal for all the family to enjoy.
  • 2 tablespoons olive oil

  • 2 onions, cut into chunks

  • 2 red or yellow peppers, diced

  • 1 aubergine, diced

  • 2 courgettes, diced

  • 2 tablespoons Garlic Italian Seasoning

  • 400 gram tin chopped tomatoes

  • 6 lasagne sheets

  • 100 gram (4 ounce) Cheddar cheese, grated


  • 1 Pre-heat the oven to 190°C, 375°F, Gas Mark 5.
  • 2 Heat the oil and fry the onions on a low-heat for 5 minutes, until softened. Turn up the heat, add the vegetables and fry for a further 10-12 minutes. Add the Perfect Shake Garlic Italian Special Blend and tomatoes and bring to the boil.
  • 3 Cover and simmer for 5 minutes, until the vegetables are almost tender and the sauce has thickened.
  • 4 Place alternate layers of vegetables and lasagne sheets in an ovenproof dish, finishing with a layer of vegetables.
  • 5 Top with cheese and bake for 25-30 minutes, until golden brown.
