Onion Bhajis with Cucumber Raita
Ingredients
1 tablespoons oil
275 gram (10 ounce) onion, chopped
25 gram (1 ounce) plain flour or gram flour
1 tablespoons Medium Curry Powder
1/2 teaspoon Garlic Granules
1/2 teaspoon mustard powder
1 medium egg
Oil for deep frying
Cucumber Riata:
1/2 cucumber, finely diced
150 gram (5 ounce) carton natural yogurt
Salt and pepper to season
1/4 teaspoon Mint Herb
COOKING INSTRUCTIONS
- 1 Heat oil in a large frying pan and fry onion for 3-4 minutes until softened.
- 2 Meanwhile, mix together the flour, Spices and mustard. Add to the onions and fry for 1 minute. Beat egg lightly in a large bowl. Stir in the onion mixture.
- 3 Heat the oil for deep frying. Using tablespoons, divide the mixture into 8 balls and cook for 3-4 minutes, turning occasionally until golden. Drain on kitchen paper.
- 4 Mix together the cucumber, yogurt, salt, pepper and Mint and serve with the bhajis garnished with lemon wedges.
- 5 This makes a classic Indian starter but is equally ideal for vegetarians or as a snack.
