Pilau Kedgeree

350 gram (12 ounce) long grain rice

4 teaspoon Pilau Rice Seasoning

100 gram (4 ounce) butter

1 large onion, sliced

225 gram (8 ounce) frozen peas, cooked

450 gram (1 pound) smoked cod or haddock, cooked, boned and flaked

4 medium eggs, hard-boiled and quartered

Instructions
- 1 Cook the rice in boiling water with the Pilau Rice Seasoning for 20 minutes or until tender. Drain.
- 2 Melt the butter in a large frying pan and gently fry the onion until soft.
- 3 Stir in the rice, peas, fish and eggs. Heat through over a low heat, stirring gently.
