  • 2 tablespoons olive oil

  • 1 tablespoons red wine vinegar

  • 1/2 teaspoon Dried Basil

  • 1/4 teaspoon Ground Black Pepper

  • 1/4 teaspoon salt

  • 6 large lettuce leaves

  • 3 tomatoes, sliced

  • 75 gram (3 ounce) cucumber, sliced

  • 1 small onion, cut into thin rings

  • 10 pitted black olives, halved

  • 175 gram (6 ounce) feta cheese, cubed

  • 1 Place the oil, vinegar, Basil, Pepper and salt in a screw topped jar and shake to combine. Arrange the lettuce leaves on a large plate.
  • 2 Lay the tomatoes and cucumber alternately in a ring around the edge. Scatter the onion rings, olives and cubes of cheese in the centre. Shake the dressing again and pour over the salad to serve.
