Deliciously sweet and chocolatey puddings with a gooey middle, delicately spiced with Cinnamon and a hint of Chilli.
Pre-heat the oven to 180°C, 350°F, Gas Mark 4.
Grease 6 individual ramekins and dust with flour.
Mix together the flour, 125g (5oz) of the sugar, 4 tbs cocoa powder, baking powder, Crushed Chillies, Cinnamon and Salt.
Add the milk and oil and blend until smooth.
Pour the mixture evenly into the ramekins. Mix the remaining sugar and cocoa powder together and sprinkle evenly on top of each ramekin. Pour 2 tbs of boiling water on each, without stirring.
Place on a baking tray and cook in the oven for 15-20 minutes.
Serve immediately with whipped cream, if desired.
