A creamy sweet and savoury soup.
Ingredients
  • 1.2 litres chicken stock

  • 1 sachet Thai Chicken Green Curry Mix

  • 2 x 150 gram (5 ounce) chicken breasts, sliced

  • 1 red pepper, deseeded and finely diced

  • 100 gram (4 ounce) beansprouts, trimmed

  • 50 gram (2 ounce) sweetcorn niblets

  • 50 gram (2 ounce) sugar snap peas, trimmed

  • 100 gram (4 ounce) fine egg thread noodles

Instructions

  • 1 Bring the stock to the boil. Add the Thai curry sauce mix and whisk well. Bring the pan contents up to simmering point.
  • 2 Add the sliced chicken and pepper and simmer for 2 minutes. Now add the remaining ingredients and simmer for 5 minutes. Serve.
