A creamy sweet and savoury soup.
Ingredients
1.2 litres chicken stock
1 sachet Thai Green Chicken Curry Mix
2 x 150 gram (5 ounce) chicken breasts, sliced
1 red pepper, deseeded and finely diced
100 gram (4 ounce) beansprouts, trimmed
50 gram (2 ounce) sweetcorn niblets
50 gram (2 ounce) sugar snap peas, trimmed
100 gram (4 ounce) fine egg thread noodles
COOKING INSTRUCTIONS
- 1 Bring the stock to the boil. Add the Thai curry sauce mix and whisk well. Bring the pan contents up to simmering point.
- 2 Add the sliced chicken and pepper and simmer for 2 minutes. Now add the remaining ingredients and simmer for 5 minutes. Serve.
