A twist on your usual mashed potatoes, this recipe combines potato with cauliflower, Garlic and Parsley, delicious served with pork or chicken.
Melt the butter in a saucepan and gently fry the onion for a couple of minutes to soften.
Add the cauliflower and potatoes and enough water to cover them both. Bring to the boil, then reduce to a simmer for 10-15 minutes, or until tender.
Drain and stir in the Cheese, milk Garlic and Parsley. Mash well and season to taste.
