Sweet, ripe beef tomatoes layered with creamy mozzarella, mixed with extra-virgin olive oil, crushed Fennel Seed, Basil and crushed Chillies - a great starter or light lunch, served with fresh crusty bread.
  • 2 large beef tomatoes, sliced

  • 125 gram (5 ounce) mozzarella, sliced

  • 2-3 tablespoons extra-virgin olive oil

  • 1 teaspoon Fennel Seeds , crushed

  • 1 teaspoon Dried Basil

  • Chilli Flakes , pinch

  • Squeeze of lemon

  • Schwartz Sea Salt and Black Pepper to season

  • 1 Arrange the tomatoes and mozzarella on a large serving plate.
  • 2 Mix the olive oil, crushed Fennel Seed, Basil, Chillies and a squeeze of lemon in a small bowl. Drizzle over the tomatoes and mozzarella and season to taste.
