Rosemary Roasted Potatoes

Christmas is the perfect time to pimp the much-loved spud. For deliciously crispy and flavourful roasties, add generous sprinkle of sweet-smelling Schwartz rosemary and a generous glug of olive oil.

Top tip: Make your Christmas spuds extra crispy by swapping the olive oil for 100g of duck or goose fat instead.

  • Place the potatoes in a large roasting tray and drizzle over the olive oil.

  • Sprinkle over the Rosemary and toss the potatoes until evenly coated.

  • Roast in the oven for 35 minutes, tossing the potatoes in the tray half-way through.

  • Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
