Christmas is the perfect time to enjoy the humble spud in all its glory. For deliciously crispy and flavourful roasties, add hearty sprinkle of sweet-smelling rosemary and a generous glug of olive oil.
Top tip: make your Christmas spuds extra crispy by swapping the olive oil for 100g of duck or goose fat.
Place the potatoes in a large roasting tray and drizzle over the olive oil.
Sprinkle over the Rosemary and toss the potatoes until evenly coated.
Roast in the oven for 35 minutes, tossing the potatoes in the tray half-way through.
Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
