Christmas is the perfect time to pimp the much-loved spud. For deliciously crispy and flavourful roasties, add generous sprinkle of sweet-smelling Schwartz rosemary and a generous glug of olive oil.
Top tip: Make your Christmas spuds extra crispy by swapping the olive oil for 100g of duck or goose fat instead.
Place the potatoes in a large roasting tray and drizzle over the olive oil.
Sprinkle over the Rosemary and toss the potatoes until evenly coated.
Roast in the oven for 35 minutes, tossing the potatoes in the tray half-way through.
Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
