Instructions

  • 1 Heat the olive oil in a deep frying pan, fry the potatoes and onion for 10 minutes or until cooked through.
  • 2 Sprinkle in the Cumin, Coriander, Mustard Seeds, Black Onion Seeds, Turmeric, Garlic and chillies and cook for 30 seconds.
  • 3 Toss in the tomatoes and spinach, stir and turn the heat down and cover the pan.
  • 4 Cook for 5-10 minutes until the spinach has wilted and the potatoes are tender.
