Ingredients
1 tablespoons olive oil
450 gram (1 pound) potatoes, diced
1 onion, chopped
1 teaspoon Ground Cumin
1 teaspoon Ground Coriander
1 teaspoon Yellow Mustard Seeds
½ teaspoon Black Onion Seed
¼ teaspoon Turmeric Powder
¼ teaspoon Minced Garlic
¼ teaspoon Chilli Flakes
2 tomatoes, chopped
350 gram (12 ounce) spinach, sliced
COOKING INSTRUCTIONS
- 1 Heat the olive oil in a deep frying pan, fry the potatoes and onion for 10 minutes or until cooked through.
- 2 Sprinkle in the Cumin, Coriander, Mustard Seeds, Black Onion Seeds, Turmeric, Garlic and chillies and cook for 30 seconds.
- 3 Toss in the tomatoes and spinach, stir and turn the heat down and cover the pan.
- 4 Cook for 5-10 minutes until the spinach has wilted and the potatoes are tender.
