Aromatic Chicken & Rice
1 tablespoons oil
450 gram (1 pound) boneless, skinless chicken breast, diced
2 tablespoons Chinese 5 Spice
350 gram (12 ounce) rice
1 red pepper, diced
Juice and zest of 1 lemon
1 tablespoons honey
1 tablespoons light soy sauce
450 millilitre (¾ pint) chicken stock
100 gram (4 ounce) peas
100 gram (4 ounce) mange tout, halved
- 1 Heat the oil in a large saucepan and fry the chicken until browned. Add the Perfect Shake Chinese 5 Spice Special Blend, rice and red pepper. Fry for 1 minute. Blend together the lemon zest and juice, honey, soy sauce and stock and add to the pan. Bring to the boil. Cover and simmer gently for 25 minutes, stirring occasionally.
- 2 Stir in the vegetables and cook for a further 5 minutes or until the rice is tender, adding a little extra water if necessary.
