Spicy Tuna Rice

2 tablespoons oil

1 courgette, diced

200 gram (7 ounce) tin tuna, drained

1 onion, chopped

225 gram (8 ounce) rice

200 gram (7 ounce) tin chopped tomatoes

600 millilitre (1 pint) chicken stock

2 tablespoons tomato purée

3 Chillies Whole

198 gram (7 ounce) tin sweetcorn, drained
Instructions
- 1 Heat the oil in a pan and fry the onion until softened. Add the rice and fry for 1 minute. Add the tomatoes, stock, tomato purée, Chillies, sweetcorn and courgette. Simmer gently for 15-20 minutes until the liquid has been absorbed and the rice is tender.
- 2 Stir in the tuna 5 minutes before the end of cooking.
