A modern recipe for a quick pizza, made with tasty ciabatta bread topped with basil, tomato and mushroom.
Pre-heat the oven to 220°C, 425°F, Gas Mark 7.
Blend together the tomato puree, olive oil and Basil, until smooth.
For four individual pizzas, cut the ciabatta in half, and then slice each half lengthways. Place the ciabatta slices, cut side up on a baking tray and spread the tomato mixture evenly over each slice.
Top with the tomato, mushrooms and mozzarella and bake for 8-10 minutes.
Great served with mixed green salad.
