Basil Ciabatta Pizza

A modern recipe for a quick pizza, made with tasty ciabatta bread topped with basil, tomato and mushroom.

  • Pre-heat the oven to 220°C, 425°F, Gas Mark 7.

  • Blend together the tomato puree, olive oil and Basil, until smooth.

  • For four individual pizzas, cut the ciabatta in half, and then slice each half lengthways. Place the ciabatta slices, cut side up on a baking tray and spread the tomato mixture evenly over each slice.

  • Top with the tomato, mushrooms and mozzarella and bake for 8-10 minutes.

  • Great served with mixed green salad.
