Brazilian Rum & Citrus Chicken Drumsticks with a Tangy Salsa

Chicken Drumsticks with a citrus marinade and a simple tangy salsa.
  • 1 sachet Grill Mates Brazilian BBQ Smokey & Zesty Marinade Mix

  • 50 millilitre (2 fluid ounce) oil

  • 50 millilitre (2 fluid ounce) white rum

  • 2 tablespoons white wine vinegar

  • 900 gram (2 pounds) skin on chicken drumsticks, scored to allow the marinade to penetrate the flesh

  • 400 gram (14 ounce) tomatoes, deseeded and chopped

  • 1 red onion, finely diced

  • 1 teaspoon lime juice

  • 1 tablespoons olive oil

  • 2 teaspoon Coriander Leaf

  • pinch Sea Salt

  • 1 In a large bowl combine the Brazilian BBQ with the oil, rum and white wine vinegar. Reserve 2 tbs for basting. Add the chicken drumsticks and coat with the marinade. Cover and leave to marinate for 15 minutes or for best results overnight in the refrigerator.
  • 2 Meanwhile make the salsa by combining the tomatoes, onion, lime juice, olive oil, Coriander Leaf and Salt in a medium bowl.
  • 3 Cook chicken on the BBQ for around 30 minutes, turning occasionally until chicken is cooked through and basting with the reserved marinade towards the end of cooking. Serve the drumsticks with the salsa.
