Chicken Drumsticks with a citrus marinade and a simple tangy salsa.
In a large bowl combine the Brazilian BBQ with the oil, rum and white wine vinegar. Reserve 2 tbs for basting. Add the chicken drumsticks and coat with the marinade. Cover and leave to marinate for 15 minutes or for best results overnight in the refrigerator.
Meanwhile make the salsa by combining the tomatoes, onion, lime juice, olive oil, Coriander Leaf and Salt in a medium bowl.
Cook chicken on the BBQ for around 30 minutes, turning occasionally until chicken is cooked through and basting with the reserved marinade towards the end of cooking. Serve the drumsticks with the salsa.
