Basque Style Cod

Cod in a spicy Mediterranean style tomato sauce.
  • 1 tablespoon olive oil

  • 1 small onion, chopped

  • 1 red pepper, thinly sliced

  • 400 grams (13 ounces) large tomatoes, skinned, seeded and chopped

  • 1 tablespoon tomato purée

  • 75 millilitres (3 fluid ounce) water

  • 1 sachet Pil Pi

  • 50 grams (2 ounces) pitted black olives

  • 2 cod fillets

  • toasted almonds (optional garnish)

  • crusty bread to serve

Cooking tip
  1. Fresh tomatoes can be substituted for a can of chopped tomatoes.


  • 1 In a large pan heat the oil and fry the onion for 3 minutes until beginning to soften. Add the pepper and fry for a further 2 minutes, before adding the chopped tomatoes, tomato purée, water, Pil Pil Street Food Seasoning (reserving a little for garnish) and olives.
  • 2 Bring to a simmer stirring, then add the cod fillets to the pan, pressing down into the sauce.
  • 3 Cover and simmer for 8-10 minutes until the cod is cooked through.
  • 4 Serve with crusty bread with a little leftover seasoning.
