Cod in a spicy Mediterranean style tomato sauce.
In a large pan heat the oil and fry the onion for 3 minutes until beginning to soften. Add the pepper and fry for a further 2 minutes, before adding the chopped tomatoes, tomato purée, water, Pil Pil Street Food Seasoning (reserving a little for garnish) and olives.
Bring to a simmer stirring, then add the cod fillets to the pan, pressing down into the sauce.
Cover and simmer for 8-10 minutes until the cod is cooked through.
Serve with crusty bread with a little leftover seasoning.
Fresh tomatoes can be substituted for a can of chopped tomatoes.
