Liver au Poivre

1 tablespoons oil

40 gram (1 1/2 ounce) butter

2 teaspoon Mixed Peppercorns, , roughly crushed

450 gram (1 pound) lambs liver, cut into thin slices

2 tablespoons plain flour

100 gram (4 ounce) button mushrooms, sliced

150 millilitre (1/4 pint) single cream

2 tablespoons water

1/4 teaspoon salt
Instructions
- 1 Heat the oil and butter together in a frying pan. Sprinkle 1 tsp of the Tropical Mixed Peppercorns over the liver and press into the surface gently.
- 2 Toss the liver in the flour, add to the pan and cook for 10-15 minutes, or until tender, turning occasionally. Transfer to a warmed serving dish.
- 3 Add the mushrooms and remaining Tropical Mixed Peppercorns to the pan and fry for 1-2 minutes, stirring. Stir in the cream, water and salt. Bring to the boil, simmer for 1 minute, and pour over the liver.
