Ingredients
  • Cake:

  • 130 grams (4 ounces) plain flour

  • 130 grams (4 ounces) caster sugar

  • 3 tablespoons cocoa powder

  • 1 tablespoon Ground Ginger

  • 1/2 teaspoon Cinnamon Ground

  • 1 1/2 tablespoons baking powder

  • 1/2 tablespoon bicarbonate of soda

  • 120 millilitres (4 fluid ounce) milk

  • 75 grams (2.75 ounces) unsalted butter, melted

  • 1 teaspoon vanilla extract

  • Topping:

  • 80 grams (3 ounces) caster sugar

  • 80 grams (3 ounces) soft brown sugar

  • 25 grams (1 ounce) cocoa powder

  • 300 millilitres (10 fluid ounce) hot water

Instructions

  • 1 Place the dry cake ingredients into a bowl and mix together. Create a well in the middle of the dry ingredients and add the milk, butter and vanilla extract. Whisk until you have a smooth batter. Transfer the batter to the slow cooker.
  • 2 To make the topping, mix the caster sugar, brown sugar and cocoa powder together. Sprinkle over the cake batter in the slow cooker and then pour over the boiling water. Do not mix.
  • 3 Place the slow cooker on a ‘HIGH’ setting, place the lid on and leave to cook for 4 hours, or until a cake tester or skewer inserted comes out clean.
  • 4 Serve immediately with ice cream or custard!
