Vegetable and chickpea with aromatic Moroccan spices served in wraps with creamy hummus.
Ingredients
  • 1 tablespoon oil

  • 1 red onion, sliced

  • 1 red pepper, sliced

  • 1 yellow pepper, sliced

  • 1 courgette, diced

  • 400 grams tin chickpeas, drained

  • 1 tablespoon tomato purée

  • 1 sachet Schwartz Spiced Moroccan Wrap It Recipe Mix

  • 150 millilitres (1/4 pint) water

  • 1 pack wraps or flatbreads

Instructions

  • 1 Heat oil in pan and fry onion, peppers and courgette for 4-5 minutes.
  • 2 Add chickpeas and tomato purée. Heat through for a further 2 minutes.
  • 3 Combine the sachet contents with the water and add to the pan, allow to sizzle for a further 1-2 minutes.
  • 4 Serve in warm wraps or flatbreads
  • 5 Load your wraps with extra flavour… Great served with grilled Halloumi Cheese, Greek yoghurt or hummous with a squeeze of lemon.
