Spiced Moroccan Chickpea Wrap

1 tablespoon oil

1 red onion, sliced

1 red pepper, sliced

1 yellow pepper, sliced

1 courgette, diced

400 grams tin chickpeas, drained

1 tablespoon tomato purée

150 millilitres (1/4 pint) water

1 pack wraps or flatbreads

Instructions
- 1 Heat oil in pan and fry onion, peppers and courgette for 4-5 minutes.
- 2 Add chickpeas and tomato purée. Heat through for a further 2 minutes.
- 3 Combine the sachet contents with the water and add to the pan, allow to sizzle for a further 1-2 minutes.
- 4 Serve in warm wraps or flatbreads
- 5 Load your wraps with extra flavour… Great served with grilled Halloumi Cheese, Greek yoghurt or hummous with a squeeze of lemon.
